ci sono altri che sono arrivati più o meno dove sei tu ma sono stato impossibilitati a far funzionare la rete come te
per la icona hai un modo semplice da provare
sezione kernel quirk del config attiva external icons
per la wifi e bt ti consiglierei se hai uno slot libero la Fenvi che uso io
non necessità di nulla

for gpu problem have you tried without any Overclock in a default bios situation ?
Only PBO enabled If you have a good cooling system
Clover ha solved a problem with TSC in its latest revison
Maybe it works bad with OC settings
To speed up a bit initial clover steps you can disable log writing on Boot Config plist section
For Aquantia have you tried this in clover?
For others problem with OpenCore I have to think about it and for now no proper idea on it
I do not know OBS Studio app and if its codec is supported properly in Monterey

I have had sometime that errors if I mix different Opencore version (eg one I use for my virtual setup with Unraid or clover boot loader)
I had to reset my bios and clear NVRAM with both bootloader
which config plist are you using?
if Resize bar is enabled put 0 in resize bar quirk
now it should be to -1 (disabled)
but it should work with -1 also if you have it enabled in bios
Ethernet in Monterey is a different story
Aquantia could work but intel one has some problem from a bit
About GPU performance
with clover is about 5/10 % lower than Opencore in many user testing
By the way
Your CPU seems a bit overclocked
about ethernet, in Monterey could be problematic
you have these ethernet on board :
1 x Aquantia 5GbE LAN chip (5 Gbit/2.5 Gbit/1 Gbit/100 Mbit) (5GLAN)
1 x Intel® GbE LAN chip (10/100/1000 Mbit) (LAN)
Second one is not working for sure if it is a i211 or similar
first one (Aquantia could work with a kext patch)
but it could be problematic in Monterey
