ciao buongiorno a tutti hai sempre le cartelle nella EFI cosi' ?  https://www.macos86.it/uploads/monthly_2021_03/Efi.png.7aea67767476d4d120d73a31cd9e1f5e.png  prova a rinominare il file dentro la cartella Ubuntu    da   Shimx64.efi  > Shimx64-orig.efi 

dovrebbe permettere di avviare Big Sur tuttavia credo che devi trovare sempre il percorso di Ubuntu e inserirlo nelle entry
